Food Vendor Requirements:
1. Food handlers must wear hair restraint, if handling open foods (hat, hairnet).
2. If serving open food, must have a temporary hand washing station and three compartment sink station.
3. No bare hand contact with ready-to eat foods.
4. Food must remain covered when not being handled for production or service including during grilling.
5. Mechanical refrigeration must be used for cold/hot holding of time/temperature control for safety (TCS) foods.
6. Food service must be positioned so that the customer line is directed away from traffic.
7. If ice is used for human consumption, ice must remain in original packaging.
