Food Vendor Requirements:
1. Food handlers must wear hair restraints that cover the full base of the head (ball cap, hairnet, etc - no visors).
2. Temporary hand wash station.
3. No bare hand contact.
4. 3 compartment wash station required.
5. Chemical test strips for sanitizer must be present.
7. Food must remain covered when not being handled for production or service.
8. Mechanical refrigeration must be used for cold holding of potentially hazardous foods. Ice is not allowed.
9. Hot holding must be used for hot holding of potentially hazardous foods.
10. Food service must be positioned so that the customer line is directed away from the drive path.
